The Pepper Tree Winery was founded in 1991 and has been developed as one of the show pieces of Hunter Valley Wine Country. It features a popular boutique Cellar Door and premium varietal wines sourced from its own vineyards in the Hunter, Orange, Coonawarra and Wrattonbully regions.

Jim Chatto, the chief wine maker, has philosophies and techniques which are reflective of a winemaker of the world, having worked locally in the Hunter as well as vintages in the Yarra Valley, Tasmania, Hungary and France. To continue to grow, Jim moved back to the Hunter Valley where he relishes the rewards of winemaking, particularly the Hunter’s Semillon and Shiraz with their distinctive regional characteristics.

Pepper Tree’s Hunter Valley vineyard is in the Mount View area of the Lower Hunter Valley in the sheltered foothills of the Brokenback Range. This area produces highly distinctive Chardonnay with flavours of melon, passionfruit and pineapple. Verdelho also performs well in the area with soft tropical fruit characters balanced by good natural acidity. Semillon has the usual lime-citrus characters with flavours being at the higher end for the variety. Shiraz from the area is typically soft, spicy and elegant with a perfumed bouquet.  The Shiraz from a good year will age favourably for many years.
