Vanitas is an extraordinary gastronomic encounter, perfectly situated in the Palazzo Versace. It is the place for classical and sophisticated fine dining. The décor is that of understated elegance with ornate mosaic marble floors and palatial fountains viewed through an entrance of flickering candles. There are sparkling lagoon pool views and a feature 13-metre canvas painting representing the life of Gianni Versace. The painting illustrates the loves of Gianni’s life and was inspired from his book.

Chef de Cuisine, James Fiske, and his team bring to the fore the culinary triumvirate of creativity, technical ability and raw materials to produce a menu of flawless dishes through a meticulous balance of flavours, textures and a touch of the whimsical.

Drawing inspiration from the location, the team has reinvented their menu by incorporating fresh and unexpected Australian produce. Whether you are a gourmand, hedonist or just constantly curious, Vanitas’ modern interpretations on a plate will challenge your dining perceptions and deliver a memorable and satisfying experience.

Vanitas is renowned for beautifully crafted and technically brilliant cuisine. The award-winning cellar, containing over 650 local and international wines from every continent, ensures there is ample wine matching combinations for either the a la carte or degustation menus.

Appetizers on the menu include Abalone with wasabi, seaweed, lemon balm and cucumber or try the Pork Belly with marron, sweetcorn, tonka bean and black pudding. Main courses feature Lamb Breast with soil baked potato, orange, baby beetroot and turnip, as well as Red Throat Emperor with summer squash, peach and lavender.

All this served on exquisite Versace tableware by knowledgeable staff. Vanitas has been awarded two chef hats by Gourmet Traveller Magazine – Australia.
